Cinnamon rolls are much more than just a pastry. It’s an invitation to the warm, friendly atmosphere that characterizes the cozy moments of life. In various countries, this delicacy is integrated into the “Hygge” art of living, which awakens the senses.
At first glance, a cinnamon roll looks like a brioche roll rolled up on itself. But what makes it irresistible is what’s hidden inside. The filling is made with cinnamon, sugar and butter, creating a delicious spiral of flavours. In other words, each bite is a balanced blend of sweetness, spice and softness.
The magic of cinnamon that transforms a simple sweet bread into an enchanting pastry. Its enchanting fragrance and comforting taste create an incomparable sensory experience.
In Sweden, it’s a popular tradition to enjoy them at coffee hour, creating a warm, intimate atmosphere. The Swedes know how to enjoy these sweet rolls in their own time, accompanied by a steaming cup of coffee. It’s a cocooning moment to relax and warm up.
What if we did the same as the Swedes?

Preparing the cinnamon rolls
- 600 g flour
- 2 eggs
- 230 ml warm milk
- 100 g sugar
- 75 g melted butter
- 1 sachet baker’s yeast
Cinnamon sugar
- 220 g vergeoise or brown sugar
- 75 g soft butter
- 10 g cinnamon
Icing
- 200 g powdered sugar
- 50 soft butter
- 100 g fresh cheese spread such as Saint Morêt
- 1 c. coffee vanilla extract
We swoon…
- Make the dough, ideally in a food processor, otherwise by hand.
- In a food processor, combine the warm milk, eggs, sugar, melted butter, flour and yeast. Use the dough program.
- By hand: conversely, dissolve the yeast in the warm milk and sugar. Place the flour in a bowl, make a well and add the 2 eggs one at a time, then the milk/sugar/yeast mixture, followed by the melted butter.
- Form the dough into a ball, cover and leave to rise for 1 hour in a proofer (oven off, closed, with a bowl of boiling water).
- Roll out the dough thinly on a floured work surface. Spread the soft butter over the entire surface with your hands, then sprinkle evenly with the cinnamon-sugar mixture. Roll into a sausage and slice into 4 cm-wide pieces.
- Arrange the sections on a sheet of baking paper in a dish (with edges if possible).
- Cover with cling film and leave to rise in the oven for 1 hour.
- Preheat the oven to 200°c and bake the cinnamons for 15-20 minutes (they should be golden brown).
- To make the icing, beat the cheese, soft butter, sugar and vanilla with an electric whisk.
